This AMAZING appetizer doesn't last long in my house! Pair this with a bag of your favorite tortilla chips and your all set!! It can also make a stunning and delicious topping for grilled chicken or shrimp and add the "Cilantro Lime Rice"(also found on this site) and you have a full meal!!! Additional serving suggestions would be to top this on salads, crab cakes, coconut crusted tilapia, stuffed in a pita or wrap with chicken, or served on quesadillas.

  1. Reconstituted the peaches, mangos and sweet corn per instructions on side of can. Drain any excess water.
  2. Mix all ingredients together in a bowl. Serve or refrigerate. The flavors combine together and get better over time. Salsa will keep up to 4 days in the fridge. Enjoy!
